banana muffins

Over Memorial Day weekend my in-laws came to visit TA and I. I had a good idea of what I was going to make for two of the three meals we would be eating at our house, but I completely forgot about breakfast on Sunday morning.

When I woke up I realized my error and decided to make yogurt scones - except I didn't have any yogurt. Instead I used up some aging bananas in the fruit bowl and made muffins.

These were surprisingly quick and easy to make - plus incredibly delicious. They're not too sweet and have just the right amount of banana flavor. I folded in some shredded coconut to the last half of the batter for TA. He's a big fan of coconut and ate nearly all of them himself.

Cheesy Onion Muffins

This is a recipe adapted from this month's Food & Wine. It's cheesy, it's oniony - and therefore delicious.

The original recipe was for a much larger pull-apart bread, but seeing as how if I made that - well, I'd eat it - I decided that it would be a much better idea to pare the recipe down to reasonable size for a 2 person household. I also tailored the recipe a little further to my liking, swapping black sesame seeds for poppy seeds and grana padano for the Gruyère. Though the Gruyère omission was due to the simple fact that the local commissary doesn't carry it - and I'm still too much of a weenie to brave any civilian grocery stores around here.

Blueberry Muffins

I finally have a kitchen again.

It has only been 3 weeks since I was last able to cook or bake, but it's seemed like much longer. I don't ever want to eat fast food again.

We are now in the process of settling down in North Carolina - my kitchen is unpacked, the rest of the house, not so much. That will come with time. As long as I can make my own food I won't go completely crazy while the house is in shambles around me.

The husband and I thought it would be nice to bake something delicious to take to our new neighbors - there's no better foot to start out on than one that involves baked goods, eh? I decided to try out Alton Brown's recipe for blueberry muffins. They are delicious - not too sweet, just enough to really showcase the flavor of the blueberries. Were I not attempting to watch my girlish figure I would brush them with a lemon glaze just after taking them out of the oven.
