banana muffins

Over Memorial Day weekend my in-laws came to visit TA and I. I had a good idea of what I was going to make for two of the three meals we would be eating at our house, but I completely forgot about breakfast on Sunday morning.
When I woke up I realized my error and decided to make yogurt scones - except I didn't have any yogurt. Instead I used up some aging bananas in the fruit bowl and made muffins.
These were surprisingly quick and easy to make - plus incredibly delicious. They're not too sweet and have just the right amount of banana flavor. I folded in some shredded coconut to the last half of the batter for TA. He's a big fan of coconut and ate nearly all of them himself.
The inclusion of nuts would be equally delicious, but I really enjoyed them plain with some fresh salted butter from a local farm.
Banana Muffins
Yields approximately 12 muffins
3 bananas, mashed
½ cup sugar
1 egg, beaten
5 tablespoons butter, melted
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon kosher salt
1 ½ cups all-purpose flour
Preheat oven to 350º F
Whisk together the bananas, sugar, egg and butter. In a separate bowl mix the baking soda, baking powder, kosher salt and flour. Mix the dry ingredients into the wet. Fold in any additional ingredients like shredded coconut or chopped nuts. Fill 12 muffin liners 2/3 full and bake for 20 minutes, or until a tester inserted into the center of the muffins comes out clean. Turn out immediately onto a cooling rack.

We could have taken you guys out for b'fast, but I'm so glad we didn't. Ha! These banana muffins were the best I've ever had. THANK YOU SO MUCH! Hugs.
I can't make muffins too often because I can't control myself around softened butter and fresh, moist muffins. Really any quick bread will do it too, which is why I don't have many recipes for them!
These look just like the banana muffins that i make at my house except that i don't put the coconut on them
But i love them they are really good muffins i totally recommend them to anyone who would like to make muffins.
