Roasted Patty Pan Squash


I just love these little guys. Well, actually I love pretty much all squash, these being no exception. I just love what personality they have, such cute little shapes. I think if I ever have kids I'll convince them they're actually little flying saucers tiny aliens abandon when they come to Earth.

And you know what they'll do if you don't eat your veggies, right....

Meh, I'll stick with the nephew for now.

These are best in their 'baby' form and simply roasted with a little bit of olive oil and some salt and pepper. It's the perfect way to enjoy summer squash in it's purest form.

Roasted Patty Pan Squash

Serves 2

6-8 Patty Pan Squash, depending on size
olive oil
sea salt and cracked pepper

1. Wash squash, slice off green ends, and then slice in half.

2. Season to taste with salt and pepper.

3. Drizzle with olive oil.

4. Roast at 375 degrees F for 15-18 minutes, turning once half way through.

So that's what they're called.... I saw them at the Farmer's markets but didn't knwo what to do with them.
